Cashew Chicken

One of my favorite dishes! It took me forever to learn how to make this simple dish and I usually make a large batch like this that will last me a weeks worth of lunches! Believe it or not - nobody else in my family likes this dish. Although Alex claims to like it, he usually picks out a few pieces of chicken and calls it a plate - at least it’s a start! The other two won’t even try.

Anna's First Meatloaf

Anna's first meatloaf. It turned out yummy and there were no leftovers ... A good sign!

Here’s the recipe:

Italian Meat Loaf

Serving Size: 6

Ingredients:

1 cup water, boiling
1/2 cup sun-dried tomatoes, (packed w/o oil)
1 cup seasoned breadcrumbs
3/4 cup onion, finely chopped
3/4 cup fresh basil, chopped
1/2 cup provolone, shredded
2 eggs
2 cloves garlic
1 pound hamburger (Wegman’s sells a meatloaf mix that works really well)
1/2 cup ketchup
1/3 cup ketchup

Directions:

1. Combine boiling water and tomatoes in a bowl, let stand 30 minutes or until soft. Drain tomatoes, finely chop.

2. Preheat over to 350.

3. Combine 1/2 cup ketchup, breadcrumbs, and the next 6 ingredients (breadcrumbs through beef) in a large bowl. Add tomatoes to meat mixture. Shape meat mixture into a 9 x 5 loaf on a broiler pan coated with cooking spray. Spread 1/3 cup ketchup over meat loaf.

4. Bake at 350 for 1 hour or until a thermometer registers 160. Let stand 10 minutes before slicing. Cut into 12 slices.
